Ingredients

    ! 1/2 2# Rolls of Jimmy Dean Regular Sausage
    3 cups chopped carrots
    3 cups chopped celery
    3 cups finely chopped onions
    3-4 cups Turkey stock*
    2 loaves Sourdough bread cubbed and stale ~ leave out overnight

    2 Tbsp Sage
    Salt and Pepper to taste

    I make my own stock while cooking this up using the neck and gizzards so much better than store bought and for next to nothing

Directions

makes 12 1 cup servings
In large deep skillet brown sausage
add sage seasoning
When brown add vegetables one at a time adding salt afer each one
When all 3 vegetables have been added continue to cook over medium or 5 minutes allowing vegetables to soften and become transluent.
Slowly add the bread. Allow each addition to become incorporated into the mixture. When mixture starts to seem dry and cannot absorb anymore bread start to add the stock one cup at a time. Stir in broth and allow to be fully absorbed before adding any more.

Once all bread is incorporated check for seasoning adjustment add S&P as liked.

Turn off heat, cover and allow stuffing to sit in pan. Allow to cool.
