Introduction
This recipe is one of my favorites. It can be made with plain croutons (or stuffing cubes) instead of seasoned ones, which will lower the sodium a little, as it is a little high in that department. You could also use less cheese, or leave it out altogether. I've altered my mother-in-law's recipe a little to make it lower in fat, but it could be altered more. It is definitely YUMMY, though! Ingredients

3 whole chicken breasts - boned and skinned
2 cans Healthy Request Cream of chicken soup
1/4 c nonfat milk
1 c reduced fat mayo
1/4 tsp curry powder
1/2 tsp lemon juice
2 c grated cheddar cheese
1 10 oz box cubed stuffing mix (I used seasoned, you could lower the sodium by using plain ones)
1 32 oz package frozen broccoli
Directions
Put frozen broccoli in bottom of roasting pan, then put in cooked chicken (either cubed or shredded). Mix soup, milk, mayo, curry, and lemon juice and pour mixture over chicken and broccoli. Sprinkle cheese over soup, then spread stuffing cubes over top. (You can melt butter and pour over the cubes, but I didn't account for it in the nutritional info). Cover with foil and bake 30 minutes, then uncover and bake another 30-40 minutes. Makes approx 10 servings.
