Ingredients

*La Tortilla Factory - Low Carb Tortilla, 2 serving
Salsa, 0.25 cup
*Refried Beans, 0.5 cup
Egg, fresh, 2 large
Tortilla Chips, 1 oz
*Kraft Shredded 2% Mexican Four Cheese blend, 0.125 cup
cumin powder 1 tsp
fresh, chopped cilantro to taste
salt & pepper to taste
Directions
In a microwave safe bowl, heat refried beans and set aside.
In a microwave safe bowl, crack two eggs, add a handful of crushed tortilla chips, 1/2 of the cheese, and beat. Heat on high in microwave for 30 seconds. Beat again. Return to microwave for another 30 seconds. Repeat this cycle until eggs are done to your liking. Set aside.
Heat tortillas in on microwave safe plate until warmed through. Plate up eggs, beans, and salsa. Top beans with remaining 1/2 of cheese and sprinkle with cumin powder. Season with salt, pepper, and cilantro to taste.
