Ingredients

1/2 c unsweetened applesauce
1/2 c sugar
1/2 c brown sugar
1 egg
1/2 tsp vanilla
1 1/2 c oatmeal
1 c wheat flour
1 tsp baking powder
1 cup dried cranberried
1 cup chopped peanuts
Directions
Preheat oven to 375˚
Cream apple sauce and sugars together, then blend in egg and vanilla. Mix in oatmeal, flour, and baking powder. Blend well. Add peanuts and cranberries.
Drop on lightly greased cookie sheet. Because there's no butter they won't flatten in the oven, so be sure they're the shape you want them!
Bake on lightly greased cookie sheet for 10 minutes.
Makes 2 dozen cookies.
