1/2 cup finely chopped onion
2 10-ounce packages frozen, chopped spinach, thawed and squeezed dry
1 8-ounce package fat-free cream cheese
1 8-ounce carton light sour cream
3/4 cup Parmesan cheese
1 14-ounce can artichoke hearts
Crushed red pepper flakes, to taste
Black pepper, to taste
1/4 teaspoon salt (optional)
1 cup reduced-fat jack cheese, shredded
