Ingredients

2 8 ounce low fat cream cheese
1 whole egg
1/4 eggbeaters
1 tsp vanilla extract
1/4 tsp almond extract
1/2 c Splenda
Almond meal 1/4 cup
2 tsp splenda
option topping: fresh cup Berries or tsp of Sugar free Jam
Directions
Preheat oven to 350 degrees. Either use a silicone muffin liners or line muffin pan w paper baking cups
Soften the cheese to room temp. Then beat in the eggs, eggbeaters and splenda, until smooth. Then add the vanilla and almond extract. Place approx 1 tsp of almond mix in bottom of muffin cup and press down w you fingers to firm up Then Fill to 2/3 level in muffin pan.
Bake for 20-25 minutes Cool on rack.
The center will fall which is just perfect to add, if you like fresh fruit, sugar free jam
Keep refrigerated.
