Ingredients

    458g chicken breast (I used 2 frozen boneless skinless chicken breasts, about 1lb)
    1whole onion, 238g
    1whole green pepper, chopped
    1 3/4 C shredded (frozen) zucchini
    1 can diced tomatoes, with liquid
    1 can green chilis
    1 can cream corn
    1 can cannellelini beans (white kidney beans)
    1 t cumin
    1 T minced garlic, or 3-6 cloves, based on your tastes

Directions

chop vegetables, put all ingredients except canned beans into crock pot (chicken and zucchini were frozen, and they can go in frozen). Cook on high for about 4-5 hours. Stir once about halfway through to move around the ingredients that started out frozen. About an hour before it's done, then add your can of beans. This is not an exact time, but I just didn't want the beans to turn to mush.
Makes 9 1-Cup servings
