Introduction

My friend Evelyn's Coconut Macaroon Recipe. I usually make this to give out at Xmas along with some other cookies. My friend Evelyn's Coconut Macaroon Recipe. I usually make this to give out at Xmas along with some other cookies.
Number of Servings: 15

Ingredients

    7 ounces sweetened coconut
    1/3 cup of sugar
    3 tablespoons of all-purpose flour
    1/8 tsp of salt
    2 egg whites
    1/2 teaspoon of almond extract

Directions

recipe makes 12-18 depending on size... i based the nutritional info on 15.

Preheat oven to 325 degrees
Mix together coconut, sugar, flour and salt.
Add egg whites and almond extract, mix well.
Drop by tablespoonfuls (mound into a round shape or ball) onto parchment lined baking sheet.
Bake 20 minutes turning once during cooking and changing shelf assignment.
Cool on rack before storing at room temperature.

Can dip in melted dark chocolate for variety, that would obviously up the calorie count :)
