Introduction

This is just something that I threw together the other day, but it turned out really good! It would also be a great veggie meal, just leave out the chicken! Ingredients

    4-5 tbsp olive oil
    1 cup chopped onion
    1/2 cup chopped green pepper
    1 bag frozen corn
    1 can black beans
    1 large can diced tomatoes
    4-5 oz precooked chicken breast (optional)
    cumin
    chilli pepper
    salt
    pepper

Directions

Heat olive oil in a non-stick skillet on med-high heat. Add chopped onions and green peppers. When onions and peppers start to soften, add frozen corn. Simmer until corn is soft and water has evaporated. Drain and rinse black beans, add to the skillet. Drain tomatoes and add to skillet. Add chicken (optional). Continue to simmer for several minutes until all ingredients are warm. Season to taste with cumin, chilli pepper, salt, and pepper.
