Introduction

Never knew Spinach tasted so good! Never knew Spinach tasted so good!
Number of Servings: 2

Ingredients

    1 cup of spinach

    2 egg whites

    1 egg yolk

    1/8 teaspoon of black pepper

    3 table spoons of part skim milk ricotta

Directions

Preheat oven to 350 degrees

Steam spinach.

Mix the egg whites, yolk, pepper together. Add spinach. Pour into a 6 inch oven safe pan, top with ricotta.

Bake for 12- 15 mins.
