A unique vegan slaw containing everything but the kitchen sink. A unique vegan slaw containing everything but the kitchen sink.
Number of Servings: 8


    5 C. finely chopped cabbage (red and green makes a pretty mix)
    2 large carrots, shredded
    1 C. chopped roasted red pepper
    1/3 C. sliced green olives
    1/2 C. raisins (not packed)

    1/2 pkg. Mori-nu lite silken tofu (or 6 oz. of silken tofu, any brand)
    2 Tbs. olive oil
    1 Tbs. apple cider vinegar
    4 tsp. dijon mustard
    1 Tbs. maple syrup
    1 Tbs. lemon juice
    1/4 tsp. salt


Mix together salad ingredients in a large bowl.

In blender, combine dressing ingredients and blend until smooth and creamy.

Add dressing to salad and combine well. Serve chilled.
