Ingredients

    2 to 3 skinless boneless chicken breasts
    3 large potatoes sliced and peeled
    2 cups green beans (french style or regular your choice)
    1 tsp of Canola or Olive oil
    1 to 2 oz Stone ground mustard
    3 tsp minced garlic
    1 tsp garlic powder
    1 tsp ground ginger
    1 tsp sea salt (if you are on low sodium exclude)
    1tsp ground cumin seeds

Directions

In a large electric skillet turned to 350 add the oil to the pan. let it heat up. throw in sliced potatoes fry for about 5 minutes moving occasionally (make sure to flip them in movement) Dice the chicken into 1 inch cubes. toss into the potatoes. add green beans and all the spices listed. mix well and cover. stir occasionally letting cook for ten minutes . after ten minutes add mustard. I like things with tons of spice and flavor so I use the full two oz. Stone ground mustard is very thick so you may need to add 1/4 cup of warm water to loosen it . this makes for easier mixing. mix well and re-cover. let simmer 5 minutes. Use the fork test on the potatoes to make sure cooked. if sauce is loose uncover to cook additional few minutes. Its all about your personal style! For color sprinkle with Paprika!
Dont like green beans? Use green peppers and onions or broccoli! Its all about you!
