Ingredients

    Organic Marinara Sauce, 1 cup
    Onions, raw, 1 medium, diced
    Eggplant, 1 large peeled and diced
    Red Bell Pepper, 1 medium
    Mushrooms, fresh, 4-5 sliced
    Zucchini, 1 medium, sliced
    Organic firm tofu 6 oz, diced
    Olive Oil, 1.5 tbsp
    1/4-1/2 cup water
    Salt and Pepper to taste

Directions

Mix all ingredients in a large baking dish and bake covered at 375 for 30 minutes. Uncover and bake at 400 for another 20-30 minutes or until vegetables are tender.
