Introduction
Some folks call this a cobbler, but where I'm from a cobbler is pie crust and filling. This has a cakelike texture, and it is so-o-o good! Some folks call this a cobbler, but where I'm from a cobbler is pie crust and filling. This has a cakelike texture, and it is so-o-o good!Number of Servings: 1
Ingredients
-
Batter
1/2 cup melted butter
1 cup flour
1 cup sugar
2 tsp. baking powder
1/4 tsp salt ( I prefer to use just a tad less sea salt in place of table salt)
2/3 cup room temperature milk
1 room temperature egg
Filling
About 3 cups canned, drained sliced peaches
1 cup sugar (You can make it with 3/4 cup and it seems to be just as good)
1 tsp cinnamon (Again I like to use just 3/4 tsp. myself)
1/2 tsp. nutmeg (Following the trend you may have noticed, I normally use only 1/4 tsp.)
Directions
Mix together the filling ingredients and set to the side.
Melt the 1/2 cup butter in a 9 x 13 baking pan in a 350-degree oven.
Mix together flour, sugar, baking powder and salt. Stir in milk and egg.
Pour evenly in baking pan with the melted butter. Spoon filling mix evenly over TOP of batter. DO NOT STIR!!!
Bake about 40 minutes until top of batter turns a nice golden brown,
Serve warm with or without ice cream.
Makes about 12 servings.
