    5 tbs. Olive Oil
    2 tsp. Lemon Juice
    1/2 tsp. Mrs. Dash extra spicy
    1 tsp. fresh Cilantro
    1 1/2 lbs. fresh shrimp-peeled
    1 lbs. fresh sea scallops-cut in half
    2 Jalepeno peppers - seeded & chopped
    1 Green pepper - cut in 2 in. pieces
    3/4 lb of Asparagus - cut in 2 in. pieces
    1 cup fresh Mushrooms
    1 can Tomatoes-diced, no salt added
    6 oz jar Artichoke Hearts (less liquid)
    12 oz jar Roasted Red peppers (less liquid)


Saute Asparagus, peppers and mushrooms til crisp/tender in 2.5 tbs oil- remove from pan
Saute Scallops & Shrimp in 2.5 tbs oil with Mrs. Dash, cilantro & lemon juice til almost done
Add veggies back to pan - add tomatoes, roasted red peppers, & artichoke hearts to pan
let simmer for five minutes
serve over rice or pasta
