Ingredients

    4 slices turkey bacon
    1 Tablespoon light mayonnaise
    2 teaspoons Worcestershire
    1 teaspoon Dijon mustard
    1 small garlic clove, minced
    4 slices whole grain bread, lightly toasted
    2 oz. brie, roquefort or other soft cheese, at room temperature
    4 leaves romaine lettuce (thick stem ends removed)
    4 oz. grilled chicken breasts
    2 Roma Tomatoes, Sliced

Directions

1) Cook turkey bacon bacon in microwave, until just crisp. Remove and set aside.

2) Meanwhile, in a small bowl, stir together mayonnaise, Worcestershire, mustard, and garlic. Spread this mixture on 2 toast pieces. On each of the remaining 2 toasts, spread 1 oz. cheese.

3) Layer each cheese–topped toast with a piece of lettuce, 2 oz. of chicken, roma tomato slice, and 2 slices of bacon. Top each with a mayonnaise-spread toast. Cut sandwiches in half and skewer each half with a toothpick to help hold it together.

    Very Good
    This is a good combo.I used regular yellow mustard instead of the dijon.A salad topped it off.Makes a good quick lunch or diner.Very tasty. - 12/19/08
