Introduction

Ingredients

300 gr. cake flour
100 gr. brown sugar + 1tbsp for sprinkle
2 tsp baking powder
2 tsp ground cinnamon
2 eggs
230 ml. soy milk or skim if you are not lactose intolerant
60 ml. corn oil
1 fresh apple, peeled, cored and shredded
Directions
Preheat the oven to 160°C.
Spray 12 muffin cups or use a silicon cup (any form you like).
Combine together the flour with the 100 gr sugar, the baking powder and 1 tsp cinnamon. In another bowl beat the eggs, add the oil and the milk. Whisk well. Stir in the flour mixture. Squeeze the juice from the shredded apple and add it to the batter. Stir with a wooden spoon.
Fill the cups 3/4 full. Combine together 1 tbsp light brown sugar with the remaining 1 tsp cinnamon. Sprinkle the top of the cakes with this mixture and pour in the preheated oven.
Bake about 25 minutes. Remove from the oven. Chill about 5 minutes on a wire rack.
Walnuts and raisins can be added in the batter if desired.
The top will be sweet and crispy. Enjoy!
