Introduction

Ingredients

1 C. Egg Beaters
10 oz. frozen spinach
1 red potato
1/2 C. diced onion
1 T. olive oil
4 oz Goat Cheese
Salt/pepper
Directions
Vegetarian but has eggs and dairy. A little high in fat, but very filling for 200 calories.
Cut potato into 1/4 inch slices. Top with water, bring to boil and cook 2-4 minutes until potato is tender. Remove from heat, and drain. Saute onion in the olive oil, add thawed spinach (I use fresh and wilt it) and saute until heated through. Add potato. In another pan, cook eggs until almost set. Place spinach mixture, eggs and top with crumbled goat cheese and put under broiler until done. Salt and pepper to taste. I serve with hot sauce and light sour cream.
