Ingredients

    2 fillet of Nile Perch
    1 cup cubed beets
    1 cup chopped onion
    1 large carrot cubed
    2 tbsp cider vinegar
    1 tbsp canola oil (for frying)
    2 cups water


Directions

1. brown onion in oil in saucepan
2. add fillet and brown lightly on both sides
3. add vegetables, vinegar, and water to cover
4. simmer until softened
