Ingredients

    4 cup fresh Spinach leaves
    1 cup sliced Mushrooms
    1/2 cup plain nonfat Yogurt
    1 1/2 tsp Olive Oil
    1/4 cup chopped fresh Basil, Parsley or Cilantro leaves
    2 tsp chopped fresh Chives,
    1 oz Lemon Juice
    1/4 tsp Salt
    1 clove Garlic

Directions

Toss spinach & mushrooms in serving bowl. Blend the remaining ingredients to make dressing. Toss together before serving.

    Actually very good. The dressing was quite bland by itself, but good with the spinach and all other vegetables I added (we had 7!). - 4/14/09
