Half lemon
Onions, Red is the best
Peppers, Yellow or Oranges are the best
Sage, Garlic, Ginger, Dill optional
Directions
Cod fillet, on tinfoil (can use any white fish)
Add all seasonings
(sage,ginger, garlic, squeezed lemon, dill optional)
Add all veggies on top
Close foil and bake for 15 Min, 20 if frozen. or until flaky and white
Oven set to 350 F

Yummy.I think I would season it a little differently. I julienned the peppers & onions and I should've chopped finely.Needed a pinch of salt and pepper. I served it on a bed of rice pilaf, side of Italian green beans, and a romaine lettuce salad topped with red onion, tomatoes & feta cheese. - 6/12/10

I made this with high expectations from the reviews, and I have to say I was disappointed. The flavors were average. Too much lemon and too much liquid coming off the veggies made the fish a bit rubbery. It's a good idea and might be tasty with some tweaking, but I probably won't make it again. - 5/12/10
