Yummy.I think I would season it a little differently. I julienned the peppers & onions and I should've chopped finely.Needed a pinch of salt and pepper. I served it on a bed of rice pilaf, side of Italian green beans, and a romaine lettuce salad topped with red onion, tomatoes & feta cheese.
