Introduction

Number of Servings: 4

Ingredients

    Shrimp, cooked (or raw), 16 oz
    Onions, raw, 1 medium
    Garlic, 3 cloves
    crushed no salt tomatoes, 28 oz
    Parsley, .25 cup fresh or a few tbsp of dried
    Feta Cheese, 1 cup, crumbled
    salt & pepper
    pam

Directions

-preheat oven to 425 degrees
-spray pam in Oven Proof Skillet and cook chopped onion and cook until softened, about 3 minutes
-add garlic - chopped & cook 1 minute
-add tomatoes & bring to a boil
-reduce heat to med-low and simmer for 5 minutes - until tomato juices thicken.
-stir in parsley and shrimp and season to taste with salt & pepper
-sprinkle feta cheese on top
-put skillet in oven and bake (if using raw shrimp then bake until shrimp is cooked through and cheese is melted (about 12 min) and if using cooked shrimp, bake until flavors have mixed together and cheese has melted. (I used cooked shrimp)
