    2 cans of rotel (mild, orginal or hot depends on your preference)
    1 velveeta cheese block. ( I used 2% because it melts better than the fat free version.)


Cut cheese into small strips or squares, place in microwave safe bowl with lid, add 2 cans of Rotel. Put lid on, microwave for several minutes until cheese is completely melted. Let cool and thicken up for a few minutes. Enjoy with chips or use a veggie dip.

    My favorite way to make this is to blend the rotel in a blender, pour into a bowl & add cheese. Stir & then microwave, stirring occasionally. I use less cheese &more rotel to make it very thin. I eat it with chips from our local mexican restaurant & it's amazing! - 12/1/12
