Introduction
I like to use Lard or bacon fat because it just tastes so much better, but you can use whatever fat you want to.I like to serve this over brown rice with fat-free sour cream and chopped onions on top. Ingredients

8 cups cooked black beans with liquid
2 cups finely chopped onions
2 T. lard or bacon fat
1 T. minced garlic, divided
1 T. cumin
1 T. chili powder
1/2 tsp. pepper
1/2 tsp. red pepper
1/2 tsp. ground margarom, opt.
about 1-2 cups water or as needed
Directions
Mash the beans with their liquid. In a large skillet, melt the lard over medium heat. Add the onions and half of the garlic. Saute until tender and transparent. Add spices and saute a little longer. Add the mashed beans and stir-fry for 20-30 minutes adding water as needed to keep the texture that you want. Add remaining garlic and continue cooking for about 1 more minute. Remove from heat and serve. Makes about 8 generous cups.
