Introduction

I like to use Lard or bacon fat because it just tastes so much better, but you can use whatever fat you want to.
I like to serve this over brown rice with fat-free sour cream and chopped onions on top.

Ingredients

    8 cups cooked black beans with liquid
    2 cups finely chopped onions
    2 T. lard or bacon fat
    1 T. minced garlic, divided
    1 T. cumin
    1 T. chili powder
    1/2 tsp. pepper
    1/2 tsp. red pepper
    1/2 tsp. ground margarom, opt.
    about 1-2 cups water or as needed

Directions

Mash the beans with their liquid. In a large skillet, melt the lard over medium heat. Add the onions and half of the garlic. Saute until tender and transparent. Add spices and saute a little longer. Add the mashed beans and stir-fry for 20-30 minutes adding water as needed to keep the texture that you want. Add remaining garlic and continue cooking for about 1 more minute. Remove from heat and serve. Makes about 8 generous cups.
