Introduction

My Mother In Laws yummy recipe for a 'snack' at parties.

*note: Garlic salt was not in the ingredient listings so I subbed garlic powder for the totals. The sodium will be off some.

Ingredients

    2 boxes chopped spinach (cooked & well drained)
    1 8 oz bag of Earthgrain's Shredded Herb stuffing
    6 Eggs
    2 Chopped medium onions
    3/4 C melted Butter (I use Smart Balance)
    1/2 C grated Parmesan Cheese
    1 TBL Accent
    3/4 tsp pepper
    1 tsp garlic salt

Directions

Cook spinach and drain well.

Mix with other ingredients.

Let chill overnight for easier ball rolling ( My MIL usually lets it chill several hours - she has no patience)

Make into nickle sized balls & place on a cookie sheet.

Bake 20-25 min at 350˚

In 2 batches my MIL will get around 65 balls.

    Excellent! I don't own Accent, and I used some red pepper flakes instead. =) Made some spicy mustard sauce to serve them with! Thanks! - 6/16/11
