Ingredients

    8 manicotti shells uncooked
    1.1/2 c cut up chicken
    1 c carrots shredded
    1 c ricotta cheese part skim
    2 tbls parsley
    1 med green onion
    1 clove garlic
    1 cup salsa
    1/4 c shredded monterey jack cheese with jalapeno pepper

Directions

Heat oven to 325 cook and drain manicotti shells.
Mix carrots, chicken, ricotta cheese, parsley, onion and garlic.
Fill manicotti shells
Place filled shells into an ungreased baking dish. por salsa over manicotta and sprinkle with monterey cheese. Cover and bake 35 minutes
