Super easy, prep is less than 5 minutes and so delicious, especially polenta or brown rice and steamed veggies to make it extra healthy. Super easy, prep is less than 5 minutes and so delicious, especially polenta or brown rice and steamed veggies to make it extra healthy.

Ingredients

    Chicken Breast
    Salsa (your favorite)
    Garlic
    Black Beans
    Cheese

Directions

Serves 8.
Preheat Oven to 350.
Rinse & drain two cans of black beans and pour into a 9x9 baking dish. Place 4 Chicken Breast (can replace with 8 thighs...better on the budget but a bit more fatty) on top of beans. Mince 3 cloves of garlic and spread on top of the chicken. Pour whole jar (12-14 ounces) of salsa over chicken. Bake for 40 minutes. Spread cheese over top (optional, can remove cheese from recipe if desired). Bake another 5 minutes. Done!
