Introduction

Asian inspired twist on a traditional omelette! Yummy... ^_^ Asian inspired twist on a traditional omelette! Yummy... ^_^

Ingredients

    2 eggs
    dash pepper
    1 tsp soy sauce or tamari
    1 tbsp flax meal (opt - adds fiber)
    1/2 clove minced garlic
    1/2 tsp fresh minced ginger
    1 tbsp chopped green onions
    1/2 cup chopped veggies (any mixture works well)

Directions


In small dish, whisk eggs together with all ingredients but mixed veggies. Cook in pan to make omelette.
If desired, saute veggies in a separate pan, then add to omelette before serving (I just put mine on fresh cut).

Enjoy! Serves 1.

    i just want to point out that Soy Sauce contains gluten...so yeah. :) looks good though! - 2/21/11
