Introduction

Don't let all the ham on the leftover bone to go to waste... Don't let all the ham on the leftover bone to go to waste...
Number of Servings: 12

Ingredients

    Ham Bone
    8 cups water
    1 tbsp EVOO
    3 cloves garlice -pressed
    3 med onions chopped
    1 cup celery chopped
    1 cup carrot chopped
    2 cups dried green lentils
    32 oz low sodium chicken broth
    Cinnamin stick
    Bay leaf
    steamed/cooked greens (optional)

Directions

Use one large pot to simmer ham bone in 8 cups water.
Sautee veggies in 2nd large soup pot in EVOO for 3-5 minutes. Add broth and lentils.
Add ham and liquid to veggies
Add cinnamin stick and bay leaf.
Cook for 90 minutes.
Shave meat off bone (discard bone)
Discard cinnamon stick & bay leaf
Add pre-cooked greens (optional)

    You really don't need any EVOO in this recipe. Save the calories. This is a real comfort recipe, especially with cornbread. - 1/18/09
