Ingredients

    2 Very Ripe Bananas
    2 Tablespoons Extra virgin Coconut oil, melted
    1/2 cup skim milk
    1 cup natural unsweetened applesauce
    3 Tablespoons Stevia sweetener
    2 Tablespoons honey
    4 egg whites
    1/2 cup natural peanut butter
    2 teaspoons vanilla extract
    1 cup whole wheat flour
    1/3 cup ground flaxseed
    2 teaspoons cinnamon
    1/2 teaspoon ground nutmeg
    1/2 teaspoon baking powder
    1/4 teaspoon Sea Salt
    1/2 cup soy, rice, or whey protein powder
    1 1/2 cups rolled oats
    2/3 cup sprouted grain cereal (i.e. Ezekiel 4:9)
    2 cups Uncle Sam cereal or similar
    1 cup dried fruit

Directions

Preheat oven to 350. Brush 9 x 13 inch glass pan with some coconut oil. In large bowl, combine bananas, oil, milk, applesauce, Stevia, honey, egg whites, peanut butter, and vanilla; mix well. Add in flour, flaxseed, cinnamon, nutmeg, baking powder, salt, and protein powder; mix well. Stir in rolled oats, cereals and dried fruit. For chewy bars, bake at 350 for 25 minutes, until the edges are golden brown. For crunchy bars bake at 300 until entire surface in golden brown which approx. 40-50 minutes. Remove from oven and let cool 10 minutes. Cut into 20 bars and then allow to cool completely. Refrigerate or freeze. These keep for up to 3 months in the freezer. Thaw overnight in refrigerator if frozen.
