Ingredients

    1 lb. boneless pork chops, fat trimmed
    1 pkg. frozen mixed stir fry vegetables
    1 can tomato soup
    2 tbsp. cider vinegar
    4 tbsp. olive oil
    garlic powder and/or powdered ginger
    1 tbsp. soy sauce
    3 c. prepared white, long grain, rice

Directions

Heat 2 tbsp. of olive oil in a skillet or wok. Cut pork chops into bite-size pieces, and stir fry in the heated oil, until all pieces are cooked through. Remove pork from the pan and set aside in a bowl.

Add 2 tbsp. olive oil back into the pan, and add the package of frozen vegetables to the pan, and stir fry until cooked through but still crisp.

Open the can of tomato soup and pour over the vegetables. Add 2 tbsp. of vinegar and mix well. Sprinkle garlic powder and/or ginger over (approx 1/4 tsp.) as desired. Add pork back into the pan, and mix well with the vegetables until coated with the sauce. Add 1 tbsp soy sauce.

Serve over rice.
