This is a healthier and easier version of my mom's famous macaroni and cheese recipe. This is a healthier and easier version of my mom's famous macaroni and cheese recipe.
Number of Servings: 9


    1 12oz box of multi grain pasta (elbow or penne)
    2 egg whites
    2 cups skim milk
    1/4 cup smart balance light buttery spread
    3 slices Borden cheddar singles
    1 1/2 cup shredded cheese


1. Cook pasta according to cooking directions on box. Once cooked, drain water well.
2. Put pasta in large bowl. Mix shredded cheese and light butter with warm pasta
3. Empty pasta into a 9x9 in nonstick baking dish if you are using a glass baking dish just spray with cooking spray.
4. In a small bowl beat together egg whites and milk. Pour this mixture on top of pasta .
5. Cut the cheese singles in half leaving you with six strip to lay on top of pasta.
6. Place in a preheated 350 degree oven for 30 minutes
