Ingredients

3 lbs lean boneless pork sirloin chops
2 cans 98% fat free condensed cream of mushroom soup
4 oz neufchatel cheese (light cream cheese)
1/4 C light sour cream
1/2 C skim milk
16 slices dried beef
salt & pepper to taste
non-stick cooking spray
Directions
Soften neufchatel cheese in the microwave for a few seconds. In a medium bowl, blend together soup, neufchatel cheese, sour cream and milk using a whisk or hand-held mixer. Set aside.
Heat a large non-stick skillet over medium-high heat. Trim the chops into 8 equally-sized portions. Spray the skillet with non-stick spray and brown the chops on both sides. Season with pepper. If the chops do not all fit in your skillet, work in batches. Do NOT season with salt at this point; the slow cooker will intensify the salt's flavor.
Spray slow cooker with non-stick spray. Transfer the chops to the slow cooker, fitting as many as possible on the bottom and reserving those (if any) that don't fit. Top each chop with 2 slices of dried beef. Pour soup mixture over chops, reserving enough mixture for remaining chops (if any). If necessary, add a second layer in the crock pot of remaining chops, dried beef, and soup mixture.
Cover and cook on low for 8 hours. Before serving, season with salt to taste if needed.
