Introduction

Ingredients

2 boxes of Jiffy Pizza Crust Mix
Hot water (as listed on the Jiffy box)
6 tbsp Extra Virgin Olive Oil
3 C part skim milk mozzarella cheese**
1 C fresh spinach
4 oz of cooked chicken breast strips, no skin (4 oz in weight after being cooked)
15 jumbo black olives (sliced or whole -- it's up to you)
1 C chopped fresh tomatoes
1/3 C grated parmesan cheese**
4 tbsp oregano
1.5 tbsp garlic powder
4 tbsp dried parsley (parsley flakes)
**cheese amount needs to be split into 2 separate bowls at a 2:1 ratio -- large amount for the crust, small amount for on top of the toppings.
Directions
1. Preheat oven to 425F.
2. Prepare Jiffy Crust as instructed on the box.
3. Once dough is ready, stretch dough onto a very lightly oiled 16" round pan. Place on the very bottom rack of the oven for 5 minutes.
4. Remove from oven and brush on olive oil.
5. Generously sprinkle on all spices (garlic powder, oregano, parsley, 1 part parmesan) and place back in oven again on the most bottom rack for 5-7 more minutes until the bottom is slightly golden.
6. Remove from oven and add mozzarella cheese, spinich leaves***, chicken, olives, and tomato.
7. Top off with remaining parmesan and mozzarella cheese. You can sprinkle on more oregano or parsley if you like.
8. Place in oven on the middle rack for 8-10 minutes until the bottom edge is golden-brown. Remove from oven, cut immedately and serve hot. Enjoy! :)
Makes one 16" pizza, 12 slices
***spinach leaves may be wilted before applying to the pizza, if you desire. To wilt leaves, place the spinach into a microwave safe bowl - uncovered - for 30 seconds. The leaves will be suck together at this point. Pull the leaves apart from one another to distribute the spinach evenly.
