Ingredients

    2 tbs olive oil
    1 lg onion , chopped
    2 lg carrots,chopped
    2 stalks celery, chopped
    1/2 can tomato paste
    2-16 oz can plum tomatoes
    2 1/2 cups lentils
    2 lbs ronzoni smart taste spaghetti

Directions

warm olive oil in lg pan
add veggies and garlic, saute for about 20 min, increase heat and add tomato paste , add tomaoes, and reduce liquid to half.
Stir in lentils, and 1 cup water. simmer until lentils are tender, about 1 hr.
serve over cooked pasta
