Introduction

I call it rustic because there's no blender or food processor involved. Just good old fashioned elbow grease that yields a nice chunky dip. Enjoy! I call it rustic because there's no blender or food processor involved. Just good old fashioned elbow grease that yields a nice chunky dip. Enjoy!

Ingredients

    1 can black beans
    1/2 small onion, finely diced
    1/4 cup prepared salsa
1 Tbsp adobo/chipotle sauce (or to taste, see note)
    1 small clove garlic, minced
    1 Tbsp lime juice
    0.5 tsp cumin
0.5 tsp chili powder (or to taste)
    salt, to taste

*Note: canned or jarred chipotles usually come packed in adobo sauce. You may also be able to find just the sauce, or it may be labeled just chipotle sauce. Look in the Mexican foods aisle.

Directions

Drain beans in a colander and rinse off the can gook. Put beans in a bowl and add the lime juice. Mash the beans using a fork or the back of a spoon until mostly broken up. If the beans are a little dry or hard to mash, add water 1 Tbsp at a time until desired consistency.

Add the rest of the ingredients and mix well. Adjust salt, chilli, or adobo as needed. Serve with pita chips, fresh veggies or baked tortilla chips.
