Ingredients

    2 cups Chicken or Vegetable Broth
    144 grams Quick-Cooking Barley (about 1 cup)
    150 grams Red onion chopped (about 1 medium)
    50 grams celery, chopped (about one rib)
    100 grams carrot, chopped ( about one medium)
    227 grams Mushrooms, chopped (about 1/2 a pound)
    3 cloves garlic, chopped
    170 grams baby spinach (about 6 ounces)
    270 grams Cannellini beans (white Kidney beans), drained and rinsed. (one can)
    Black pepper to taste.

Directions

1.) In a large saucepan, bring broth to a boil. Stir in barley. Reduce heat; cover and simmer for 10-12 minutes, or until barley is tender. Remove from heat; let stand 5 minutes.

2.) Meanwhile, in a large skillet saute the onion, celery and carrot in a small amount of water for 3 minutes. Add mushrooms and garlic; saute 3-4 minutes longer or until vegetables are tender. Stir in the spinach, beans, pepper and barley; cook and stir until spinach is wilted.

    Very Good
    This was pretty good and really healthy. I found it a little bland so the next time I make it I'll add a little spice. - 8/29/10

    I usually add seasonings, but I've found that a lot of people will comment that it was too spicy, too salty, etc. so I started leaving it off the list, or putting "seasoning to taste".

    This was very good. My son especially liked it. I added 1 T. chili garlic sauce because we like things spicy. - 3/12/09
