Ingredients

    Refried Black Beans, 1 can
    Onions, raw, 1 small chopped
    Soup, chicken broth, canned, less/reduced sodium, 1 can
    Sweet potato, cooked, 1 Large
    Garlic, 1 clove minced
    Green Peppers 1 med , chopped
    Pepper, red or cayenne, 1 pinch
    Basil, 1 pinch
    Oregano, ground, .1 pinch
    Diced Tomatoes, No Salt Added, 1 can
    Whole Grain Quinoa, 1 serving =.25 cup dry, 1.25 cup

Directions

Chop Potatoe, onion and bell pepper in fine pieces place in a pot with broth and simmer until potatoes are tender add the remaining ingredients but the quinoa cook it according to package and then add to potato and bean mixture.

Makes about 10-1 cup servings
