Ingredients

    Tilapia Filets
    Any Store Brand Frozen Gumbo Mix
    Uncle Ben's Boil-in-bag White Rice
    Canned Sweet Corn
    Canned Diced Tomatoes
    Tony Chachere's Creole Seasoning

Directions

Heat oven to 400 degrees. Tilapia can be placed in the oven frozen and does not have to be thawed. Sprinkle Tilapia with Creole Seasoning. In large pot mix together Gumbo Mix, Tomatoes and Corn (do not drain). Bring to a simmer. Simmer for 20-25 minutes. Tilapia needs to be baked until flaky (insert a fork into largest part of fish and turn, should flake easily). Cook rice according to cooking instructions (usually 2 bags cooks in 12 minutes). To Serve : Place 1 Tilapia filet in center of individual plate. Cover with 1 cup of Rice. Cover Rice with 1 cup of Gumbo and serve. ENJOY!
