Introduction

Suggestion....next time I make these I will use "Splenda Brown Sugar Blend" to make them sugar free. I will also use all whole wheat flour instead of half and half. If I can find a good baking substitute for the butter, I will try that as well. Surpisingly, these little cookies hit the spot and are quite filling. 2 = serving and 113 calories and 1 weight watcher point. If you need a nice snack or dessert, 4 of these little cookies is 226 calories and 2 weight watcher points!!! Ingredients

    2 tbsp. butter (or butter substitute)
    2 tsp. Smart Balance Omega 3 Oil
    1/2 c. packed brown sugar
    1 tsp. vanilla extract
    1/2 tsp. salt
    1 egg white (or egg substitute)
    3/4 c. flour (1/2 white flour & 1/2 whole wheat)
    1/4 tsp. baking soda
    1/2 c. Hershey Special Dark Chocolate Chips

    Beat together first six ingredients with mixer until creamy. In separate bowl, combine all dry ingredients with a fork. Add dry mixture to wet mixture with a wooden spoon. Once combined, add in chocolate chips.

Directions

Drop mixture by rounded 1/2 tsp. onto ungreased non-stick baking sheet. Bake at 375 for 4-6 minutes or until edges are golden brown.

Cool on wire rack. Serve with fat-free milk. Enjoy!

    Give it a try...they are sooo good! I made them again this weekend using all whole-wheat flour and "splenda brown sugar blend" and they are delicious! Enjoy!

    Just a note to the above posters: MINI, not MINT chocolate chip cookies.

    On a side note, my brother tried making chocolate chip cookies with all Splenda, no sugar, for my dad (he's diabetic), and the texture was terrible - like a cookie that had been made of dried-out instead of baked dough.

    Thanks, they indeed are "mini" chocolate chip cookies! Hubby recently diagnosed as diabetic, so I am trying to fit splenda or other sugar substitutes into any dessert recipes so that he can enjoy them as well. I did make this again using whole-wheat flour and Splenda Brown Sugar Blend. Still great!

    Sorry, no mint. They are "mini" or "small" chocolate chip cookies. I made them again this weekend using all whole-wheat flour and "Splenda Brown Sugar Blend". They were still excellent!! Hope you try them and enjoy as much as my family and I do!

    Oven temp and baking time are listed in the directions at the bottom of the recipe! Bake at 375 for about 4-6 minutes, depending on your oven.
