Number of Servings: 10

Ingredients

    1.75 cup flour
    .25 cup sugar
    2.5 tsp baking powder
    1 egg, beaten
    .75 cup milk
    1/3 cup vegetable oil

    Optional: 1 cup blueberries or cranberries, or 3/4 cup raisins, chopped nuts or chocolate chips

Directions

Preheat oven to 400F. Measure the flour, sugar and baking powder into a medium bowl. In a small bowl, whisk together the egg, milk and oil, and add all at once to the flour mixture. Stir until the flour is completley moistened, but don't overmix - a few lumps are ok. Gently stir in any optional ingredients, if you're using them.
Spoon batter into a well-greased or paper-lined muffin pan, filling the cups almost to the top. Bake at 400F for 20-25 minutes, until a toothpick poked into the middle of a muffin comes out clean.

Makes about 9-10 muffins.
