Introduction

Ingredients

3 1/2 C. Water
2 Tbsp. Loose Black Tea (i.e. Darjeeling)
1 Cinnamon Stick
4 Whole Cloves
1/4 tsp. heaping Ground Cardamom
2 Whole Allspice
Pinch of Ground Black Pepper
Sliver of Fresh Ginger
2 1/2 C. Fat Free Milk
1 1/2 Tsp. Sugar (optional)
Directions
Pour water into a saucepan and add black tea, cloves, cardamom, allspice, black pepper and ginger. Break apart the cinnamon stick into large pieces and add to the other spices and water. Bring mixture to a boil. Let simmer on medium heat for between 5 and 10 minutes stirring occasionally.
Add milk and optional sugar and bring to a light boil. Strain and serve!
Masala chai is normally a sweetened drink, I prefer it without sugar. It can also be made with full fat milk, condensed milk or heavy cream. For a bit more bite adjust the black pepper and ginger. Can also be frothed after straining for lattes.
Makes about 4 servings depending on the size of the coffee mug.
