Number of Servings: 6

Ingredients

    1 pound of ham diced
    1 can Low Fat Cream of Mushroom Soup
    1 onion diced
    8 small potatos peeled and sliced thin
    1 cup of skim milk
    1 cup of Kraft 4 cheese italian blend (or any cheese)
    1 - 1 1/2 Tsp of Emerils Essence
    1/4 cup of crushed corn flakes
    PAM Cooking Spray

Directions

1. Preheat oven to 350 degrees.
2. In a small bowl mix together the soup and the milk. Add the seasonings.
3. Prepare a deep dish casserole with nonstick spray.
4. Loosely place a layer of peeled and sliced potatoes on the bottom. Next a layer of diced onions, then a layer of ham, then a layer of soup mixture, and continue layerings until all ingredients are used ending with the soup. (Should be 3 layers)
5. Bake in hot oven 50 - 60 minutes until heated through and bubbly and slightly brown on top. Check the potatoes are cooked through. After 50 minutes top with grated cheese and return to the oven. Cook another 10 minutes til cheese is melted and bubbly.

You can also add green beans, peas or brocolli to this dish for a one pot meal.

Makes 6 - good sized servings
