Introduction

These are so good and they stay with you for a long while. These are so good and they stay with you for a long while.
Number of Servings: 15

Ingredients

    1 cup packed brown sugar
    1 cup I Can't Believe It's Not Butter
    2 tsp vanilla extract
    1/2 cup egg beaters
    1 cup all purpose flour
    3/4 cup whole wheat flour
    1 tsp baking soda
    1 tsp ground cinnamon
    1/4 tsp table salt
    1 cup old fashioned oats
    1 cup Fiber One cereal
    1/2 cup raisins

Directions

Heat oven to 350.
In large bowl, beat brown sugar and butter w/electric mixer on medium speed until creamy.
On low speed, beat in vanilla and egg beaters until well blended.
Grind Fiber One in food processor to crumb consistency.
With spoon, stir in oats, crumb cereal and raisins.
On ungreased cookie sheet, drop dough by heaping TBSPs about 2" apart.
Bake 15-18 minutes or until set and golden brown. Immediately remove from cookie sheet to cooling rack.

Makes 15 large breakfast cookies, one cookie per serving.

    Thank you for the base recipe! I changed a few things, using applesauce for the butter, ground oats for the white flour and 1/2 craisins for 1/2 raisins. That dropped the calories down to 150 per cookie w/ 1 g fat. :) - 9/22/11
