Ingredients

6 bell peppers, halved lengthwise and seeded
8 oz. lean ground turkey breast
1 box Zatarain's Dirty Rice Mix (uncooked)
1 tbsp extra virgin olive oil
1 medium tomato, diced
3/4 cup Athenos Reduced Fat Crumbled Feta Cheese
Directions
1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
2. Lightly brown ground turkey and drain.
3. Cook Zatarain's Dirty Rice Mix according to directions adding turkey. Set aside.
4. Place the peepers cut side down on the prepared baking sheet. Roast 20 to 25 minutes in the preheated oven , or until tender and skin starts to brown.
5. While the peppers are roasting, heat oil in a large skillet over medium-high heat. Stir in tomato and cook for 5 minutes.
6. Spoon in the cooked Zatarain's and turkey mix, and stir until heated through. Remove from heat, mix in feta cheese.
6. Spoon mixture into pepper halves and return to oven for 5 minutes. Serve immediately.
