Introduction

4 chicken breasts, boneless and skinless
1/2 cup sour cream, reduced fat
1 8 oz. box frozen spinach
4 slices fat-free pepper jack cheese
4 slices turkey bacon

Ingredients

    Our friends own a catering business, and this is one of their most requested items. I have made it healthier by using fat-free cheese, reduced fat sour cream, and turkey bacon. It is delicious and a good recipe to serve a specail occasions. Try serving with steamed asparagus, fresh fruit salad and brown rice.

Directions

Cook spinach as directed on box, and drain well. Let cool while preparing chicken breasts.
Butterfly the chicken breasts. Place between waxpaper and pound with meat mallet until thin.
In small bowl, stir together sour cream and spinach until well mixed.
Take one chicken breast, place one slice of cheese on top, then spoon 1/4 of sour cream and spinach mix on. Roll chicken breast , then wrap with 1 piece of turkey bacon. Secure baon with a wooden toothpick on each end.
Repeat with other 3 breasts.
Place chicken rolls on broiler pan sprayed with Pam. Bake in 350 degree oven for 30 minutes, then turn broiler on and broil for 10 minutes. Remove from oven and serve. Makes 4 servings.

    Very Good
    This is really good, next time I would make it with about half the amount of spinach, the flavor of it was a little overwhelming. I didn't have any bacon, so I used bacon bits instead, but it was just as good. - 2/24/09
