Ingredients

    Pam (olive oil flavor)
    1T. Honey (OR: 1t. Agave or 1/2T. Mirin)
    1T. Lite Soy Sauce
    1T. Fresh Squeezed Lemon Juice
    1/2T. Mirin (optional)
    2 Cloves Garlic, sliced thin
    1C Baby Leaf Spinach
    1/2T. Olive Oil (not extra virgin)
    6oz. Black Cod
    Fresh Pepper to taste

Directions

Wash spinach, dry well (can be done ahead).

Heat broiler to HIGH. Lightly spray baking sheet with PAM and heat under the broiler.

In bowl, using a whisk, mix honey, soy, lemon juice. (If using Agave, only 1 teaspoon is needed).


Pat dry the fllet with paper towel, brush glaze on both sides.

Using gloves, remove hot baking sheet from oven. Place cod, skin side down, and return to broiler. Broil 10 minutes or when fish flesh is opaque.

Heat olive oil in fry pan over medium heat, add thin slices of garlic, reduce heat to medium-low and cook 3-5 minutes then add the spinach into pan, toss and cover pan. Allow spinach to wilt and turn bright green, apprrox 2-3 minutes.

Place spinach on plate and top with broiled fish.
Add fresh pepper to taste.

    Incredible!
    This is an fast, easy, delicious dinner option. The first time I made it, I only had black soy sauce, so I cut the amount down to reduce the sodium. It tasted like miso cod, which is much higher in calories. Wonderful!! - 6/26/11

    My family loved this. It was easy and delicious. While I increased all of the ingredients to make the recipe for four people, I kept it to 2 garlic cloves which was more than enough. - 3/30/11

    Incredible!
    I had a whole fish, so I slided it into 1" steaks and then followed the directions. I did have a happy mistake, I put the garlic in with the sauce for the fish. I broiled it till it it turned a nice golden color & it was delicious. Didn't make the spinach tho, never got around to it. - 8/2/10

    Delicious! In my electric oven, I had to broil for 5 min and then switch to oven for about 10 min (otherwise it would have burned but been undercooked) - 2/7/10
