Ingredients

1 1/2 medium onion - cut in strips
1 package fresh baby spinach (6-8 oz)
3 lbs boneless skinless chicken breast- cut into cubes
1 jar Trader Joe's Masala sauce
1 tbsp Olive Oil
Directions
makes 6 servings
Over medium heat,saute sliced onions in Olive Oil. when onions begin to become translucent, add chicken and cook until chicken changes color. Add jar of Masala sauce. Stir and continue cooking until sauce becomes hot. Add fresh spinach , mix in and continue cooking until spinach begins to wilt. divide into 6 portions and serve with brown rice and a tossed salad.
You may replace chicken with chick peas. Frozen chopped spinach can be used instead of fresh- defrost frozen spinach and squeeze out excess water before using.
