Number of Servings: 4

Ingredients

    1 14.5 oz. can wild salmon
    2 tbsp. lemon juice
    1.5 tbsp. dijon mustard
    3/4 cups dried bread crumbs
    1/2 cup sliced green onions
    2 eggs

Directions

Drain & flake the salmon. I like to remove the vertebrae & ribs at this point, although that might lower the calcium content. Combine all the ingredients in a mixing bowl until well blended. Press into four patties. If you refrigerate them for about an hour they'll hold their shape better, but this isn't necessary. Saute in a lightly oiled skillet until browned on both sides. I like to microwave all four of them for an extra minute or so, just to make sure the egg is cooked all the way. I haven't gotten sick yet!
